Victoria's Pizza Sauce


I canned the 4 pints of this a few years ago and it was delicious. I am hoping to have enough tomatoes this year to can some more of it as well as several jars of Pasta Sauce.
Victoria's Pizza Sauce 


Yield: 4-5 pints

25 - 28 tomatoes
2 large onions
4 cloves garlic
3 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon cracked pepper
1 tablespoon sugar
2 tablespoons chopped parsley
1 tablespoon oregano
1 tablespoon basil
1 teaspoon rosemary
1 teaspoon celery seed
2 teaspoon salt
1/2 teaspoon summer savory

1. Peel and puree the tomatoes
2. Mince onion and garlic
3. put olive oil in a deep pan and saute the onions and garlic until transparent, add the tomato puree and the rest of the ingredients. Stir well to blend.
4. Cook on low until mixture is reduced by half, stirring occasionally. This will take about 1 1/2 to 2 hours.
5. When sauce is done and thickened ladle into hot, sterilized jars.
6.Clean jar rims and seal.
7. Process in a hot water bath for 25 minutes.
