Yummy Herbal Butters

I am so looking forward to summer barbecues and these delicious homemade butters on my fresh roasted over the barbecue corn on the cob
Herb Butters
Try adding an herbal butter to your sweet corn.
Start with a 1/2 cup softened butter ingredients from one of the selections following.
* 1 tsp.marjoram and 1 tsp. chopped fresh thyme.
* 2 tsp. chopped fresh dill and 1 tsp. chopped fresh thyme.
* 1 tbsp. fresh thinly sliced basil leaves and 1 tsp. chopped fresh thyme.
*1 tbsp. finely snipped oil~packed dried tomatoes, 1 tbsp.finely chopped chives and 1 clove minced garlic.
* 2 tbsp. finely chopped parsley, 1 tbsp. finely grated lemon peel, and 1 tbsp. finely grated orange peel.
Place the ingredients that you have chosen in a small bowl, mix with the 1/2 cup softened butter. Stirring until combined. Cover and chill in the refrigerator. Bring the mixture to room temperature before serving.

Basil is the main ingredient in Pesto Sauce. It is the perfect companion of fresh tomatoes as well as tomato sauce. It also goes well with rice, potatoes, peppers, carrots as well as eggplant.
It is also a wonderful ingredient in a mixed green salad.
* Puree fresh clean basil leaves together with enough extra~virgin olive oil to liquefy them. Freeze them in ice cube trays, after they are frozen remove from trays and place in resealable freezer bags or any freezer type container.
* Chop or slice thinly several fresh basil leaves and sprinkle over fresh sliced tomatoes. Drizzle on a little olive oil , season with salt and pepper . Relax and enjoy with a nice crusty bread a tall glass of iced tea or a glass of white wine.



Italian parsley is best when used in cooking due to its milder flavor and juicy texture . It adds to the flavor of green salads and is great in egg dishes , steamed vegetables, beans, pasta and rice dishes. It is an excellent source of iron, vitamins A, C, and E.
* For a new twist on pesto, combine 3 cups packed parsley leaves, 3 cloves garlic, chopped, and 3 tbsp. lemon juice with a 1/2 cup each toasted pine nuts, grated Parmesan cheese and olive oil.
Blend until well combined. Serve over pasta, potatoes , or as a dip with chips.
* Green Juice...This is especially good for woman during her monthly cycle as it is choke full of well needed iron. Puree a handful of parsley and squeeze thorough a cheese cloth..add the liquid to a tall glass of orange juice.
*Linguine or spaghetti.....cooked until just tender and then tossed with olive oil, minced garlic and lots of fresh parsley...Sprinkle with grated cheese.

Thyme's tiny gray~green leaves are a must in any herb garden as well as in the kitchen. Thyme adds flavor to most stews, soups, and casseroles. Its wonderful taste blends well with basil and lemon. It is used liberally in Greek, French, Cajun and Creole dishes.
* Insert sprigs of fresh thyme under the skin of a whole chicken or game hen before roasting it. The flavor seasons the poultry as it cooks.
* Its leaves are easily air dried..which means thyme in the kitchen year round. Add fresh or dried thyme leaves to split pea and lentil soups..add when cooking Lima's and all bean dishes.
*When cooking steamed carrots, asparagus or artichokes or as a dressing for mixed green salad....make up a light vinaigrette by combining 1 tsp. fresh thyme leaves, 1/2 cup white wine vinegar, 2/3 cup olive oil , 1 tsp. Dijon mustard, 1 tsp paprika and 1 tsp. minced garlic.

Oregano adds a zesty flavor to a variety of tomato and cheese dishes as well as many meat, egg , pepper, and eggplant dishes. Oregano is at times refereed to as the "PIZZA HERB". Oregano is easily aired dried for storage.
Be sure to use it liberally on homemade pizza.
* Make a savory garlic bread by mixing minced garlic, fresh oregano, and soft butter. Spread the mixture on thick slices of french bread, and broil until bubbly.
* heat 1 tbsp. butter, and 1 tbsp olive oil in a pan . Add 2 scallions and 1 large clove garlic, minced. Saute gently until quite fragrant, about 2 to 3 mins. Add 1 pint whole cherry tomatoes, 1 1/2 tbsp. chopped fresh oregano, and 1/2 cup fresh chopped basil. Cook , shaking the pan for 2 to 3 mins. or until heated through. Season with salt and pepper.

Chives are a mild member of the onion family. To set off the flavor of salads, eggs, potatoes, rice and many other dishes than you will want to add chopped up leaves of the chive.
*Combining one stick of softened sweet butter with 1 tsp. freshly squeezed lemon juice, 3 tbsp. of fresh chopped chives and 1/4 tsp ground pepper. Slather liberally over a grilled corn on the cob ...Pure delight.
* Adding fresh chopped chives over potato salad, egg salad , tuna salad or chicken salad ..Is sure to add not only a mild onion flavor but add color as well.
